Smokin.....

Hello, dear readers!

Happy New Year!

I am a subscriber to www.justonecookbook.com and she has such great recipes - this time a smoked beef roast. As I was watching her prepare her food with the smoker the other day, I thought  that I might need another toy to play with.

I actually was interested in the larger cooker as it would have given me more room, but there's only the two of us to fix food for.....so this one worked out perfectly with room to spare.  I will need to order several different kinds of chips though:  the bourbon chips sounded good when I make our salmon. 
 I'm hungry already.


There was no one in town who carried it, and I tried everywhere.
So I jumped to the amazing Amazon (of course) and there it was, complete with all the different kinds smoking chips.
I ordered this and one container of mesquite.  It came with alder chips.   It arrived yesterday!  
There was free shipping on this item as well, which was really nice. 



Okay, get out skinless chicken breasts.  
Together they weighed 1 pound + 4oz which was perfect for the two of us.
Following the directions that came with the smoker for the chicken, I seasoned them and wrapped them in a strip of bacon.
 It took exactly 30 minutes for the two chicken breasts.  You start to time your food when you see a little curl of smoke, then you shut the lid.
It smelled divine. 
I must say I always dry out the chicken breasts by cooking them in the oven.  
This was a wonderful surprise!  
I am amazed that these chicken breasts were cooked through and so juicy we couldn't believe it.

I can see a lot of uses for this nifty smoker. 
 I thought today I'd try a meat loaf with sliced potatoes and onions.  I'm drooling already.
